Tortillas are the foundation

Our heirloom corn varietals, sourced directly from small farms in Mexico, is nixtamalized and ground daily to make exquisite hand-pressed tortillas and tostadas. This laborious process creates fresh masa that tastes amazing and retains vital nutrients that are lost when using industrial processes.

time-honored culinary techniques  

From our wood-fired grill to the trompo of lamb al pastor (brought to Mexico by Lebanese settlers in the late 1800’s), from fresh masa and homemade salsas, we bring old world Mexico to the new world of Dubai.

freshest ingredients

Authentic Mexican cuisine is made in small quantities using fresh food over industrialized ingredients. We avoid shortcuts, purchasing in-season produce and herbs grown nearby whenever possible.

locally-sourced when possible

To support local businesses and keep our footprint as small as possible, we source as locally and sustainably as possible from the farms and waters in and around Dubai. We buy all of our seafood from local fleets, and work with Integrated Green Resources (IGR), as our local farm partner. IGR is able to grow tomatillos, chiles, greens, and other Mexican products locally and organically.
